Banana Bread

During these lockdowns I cook! This is an old favourite using frozen bananas that I freeze whole in their skins. It’s light, moist and of course, delicious 
If I ever get the opportunity to buy bananas in bulk, I pop them whole in the freezer. This is one of my recipes I use for frozen bananas!

Banana Bread Ingredience

  • Butter 155 grams
    Sugar 60 grams
    3 eggs
    4 frozen bananas
    2 cups flour
    1 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp salt
  • Demerara sugar
  • Cinnamon


In an electric mixer add sugar and butter and beat until combined and beginning to lighten in colour
Add one egg at a time
Add cut frozen bananas until light and fluffy
Mix and sift the flour,baking powder, salt and baking soda
Add to wet ingredients until just combined
Put into greased loaf tin
Mix Demerara and cinnamon together and sprinkle on the top
Bake at 180 degrees for an hour until skewer comes out clean
